Tough call!
For one thing, it’s hard to pick just one novel. For another, and perhaps more importantly, it’s hard to pick just one book that’s representative of just one series. Epic fantasy rarely comes as a stand-alone volume, and even though that’s not a universal rule, I’m still going to interpret this question as referring to the best epic fantasy series rather than novel.
To which I answer: Kate Elliott’s Crown of Stars. Or her Crossroads trilogy, or her Jaran books, even though they’re technically SF, or her as-yet incomplete but still entirely awesome Spiritwalker series. Basically, you cannot go wrong with Kate Elliott, because pretty much everything she writes is weapons-grade awesome. Failing that, I highly recommend Katharine Kerr’s Deverry series, Robin Hobb’s Assassin and Liveship trilogies, everything by N. K. Jemisin, and George R. R. Martin’s A Song of Ice and Fire (though the latter definitely has problematic elements).
